Caribbean Fresh Pineapple Cocktail
- 4 oz light rum
- 2/3 cup fresh pineapple
- superfine sugar to taste
- 1/2 cup finely crushed ice
- sprig fresh mint
- Combine the rum and pineapple in an electric blender and blend o high speed until the pineapple is completely smooth.
- Taste and blend in some sugar if necessary.
- Put the ice int a glass and pour in the drink.
- Stir to mix, then decorate with a sprig of mint.
- Recipe may be doubled or tripled.
