Caribbean Fresh Pineapple Cocktail


  • 4 oz light rum
  • 2/3 cup fresh pineapple
  • superfine sugar to taste
  • 1/2 cup finely crushed ice
  • sprig fresh mint
  • Combine the rum and pineapple in an electric blender and blend o high speed until the pineapple is completely smooth.
  • Taste and blend in some sugar if necessary.
  • Put the ice int  a glass and pour in the drink.
  • Stir to mix, then decorate with a sprig of mint.
  • Recipe may be doubled  or tripled.
