Idaho Potato Lobster Mashed Potatoes
Ingredients
2 and 1/2 lbs peeled and quartered Idaho potatoes | ||
5 oz heavy cream | ||
4 oz salted butter | ||
2 tsp kosher salt | ||
2 oz roasted garlic | ||
2 pinches white pepper | ||
1 lb Maine lobster, steamed, chilled and tail cut into 8 pieces | ||
4 oz salted butter | ||
1 tsp old bay seasoning | ||
1 tbs charred scallions, 1/4 inch cut |
- Boil and steam the potatoes until they are fork tender.
- In a mixer add the potatoes, cream, butter, salt, pepper and roasted garlic and whip on low speed for about two minutes, then on high speed for 3 more minutes or until smooth.
- Alternatively you may put the potatoes through a potato ricer the add ingredients to a bowl and beat until smooth.
- In a saute pan over medium heat add steamed and de-shelled lobster, butter, old bay and charred scallions.
- Cook until butter is foamy.
- Place mashed potatoes in a serving dish and place lobster on top, then pour the butter mixture over the lobster and potatoes.
