Brown Butter (Beurre Noir)

  • 1 stick unsalted butter
  • 1 tbs fresh lemon juice
  • 1 tsp kosher salt
  • 1/4 tsp white pepper
Brown butter is a classical French preparation that is delicious drizzled over poached eggs or fish.

  • Melt butter in a small sauce pan.
  • Stir over very low heat until it becomes quite dark, but not burned, about 5 minutes.
  • Add lemon juice, salt and white pepper.
  • Mix well and chill until ready to use or use right away.
