Brown Butter (Beurre Noir)
- 1 stick unsalted butter
- 1 tbs fresh lemon juice
- 1 tsp kosher salt
- 1/4 tsp white pepper
Brown butter is a classical French preparation that is delicious drizzled over poached eggs or fish.
- Melt butter in a small sauce pan.
- Stir over very low heat until it becomes quite dark, but not burned, about 5 minutes.
- Add lemon juice, salt and white pepper.
- Mix well and chill until ready to use or use right away.
