- 12 tbs mayonnaise
- 1 tbs rice vinegar
- 1 tsp, grated fresh ginger
- 1 Fuji apple
- 1/2 cup sharp cheddar cheese, grated
- 2 tbs fresh cilantro, coarsely chopped
- kosher salt and black pepper to taste
- In a medium bowl, whisk together mayonnaise, vinegar and ginger.
- Cut the apple into quarters, then remove the cores, then cut into thin slices, then into matchsticks.
- Add apple, cilantro and cheese the the mayonnaise mixture, the gently combine well.
