Gingered Apple Cheddar Slaw

  • 12 tbs mayonnaise
  • 1 tbs rice vinegar
  • 1 tsp, grated fresh ginger
  • 1 Fuji apple
  • 1/2 cup sharp cheddar cheese, grated
  • 2 tbs fresh cilantro, coarsely chopped
  • kosher salt and black pepper to taste


  • In a medium bowl, whisk together mayonnaise, vinegar and ginger.
  • Cut the apple into quarters, then remove the cores, then cut into thin slices, then into matchsticks.
  • Add apple, cilantro and cheese the the mayonnaise mixture, the gently combine well.
