Broiled Italian Tomatoes


  • 4 ripe tomatoes, cut in half
  • kosher salt and black pepper to taste
  • 2 cloves garlic, minced
  • 2 cloves garlic, minced
  • 2 tbs extra virgin olive oil
  • 1 tbs oregano
  • 1/2 cup dried bread crumbs
  • 2 tbs fresh basil, chopped
  • freshly grated Parmesan cheese
  • Slice the tomatoes in half, cutting across the grain.
  • Arrange on a baking sheet and season with salt and pepper.
  • Mix the garlic, oil, oregano and bread crumbs together and spread evenly on top of each tomato.
  • Top each tomato evenly with basil, then top with Parmesan cheese.
  • Place the tomatoes in a preheated 375 degree oven and cook for about 15 minutes or until the cheese has melted and the tomatoes have heated through. Do not over cook because the tomatoes will become mushy.
