Caribbean Sweet Potatoes with Coconut Milk
Ingredients
4 sweet potatoes, peeled and cubed | ||
1 (15 oz) can of coconut milk | ||
2 tsp ground cardamom | ||
1 tbs brown sugar |
Directions:
- In a heavy pot with a lid, add all the ingredients and simmer until the sweet potatoes are tender, about 30 minutes.
- Serve as a side dish.
