Caribbean Sweet Potatoes with Coconut Milk


  • 4 sweet potatoes, peeled and cubed
  • 1 (15 oz) can of coconut milk
  • 2 tsp ground cardamom
  • 1 tbs brown sugar


  • In a heavy pot with a lid, add all the ingredients and simmer until the sweet potatoes are tender, about 30 minutes.
  • Serve as a side dish.
