Caribbean Sweet Potatoes with Coconut Milk
- 4 sweet potatoes, peeled and cubed
- 1 (15 oz) can of coconut milk
- 2 tsp ground cardamom
- 1 tbs brown sugar
- In a heavy pot with a lid, add all the ingredients and simmer until the sweet potatoes are tender, about 30 minutes.
- Serve as a side dish.
