Caribbean Sweet Potatoes with Coconut Milk
|4 sweet potatoes, peeled and cubed|
|1 (15 oz) can of coconut milk|
|2 tsp ground cardamom|
|1 tbs brown sugar|
- In a heavy pot with a lid, add all the ingredients and simmer until the sweet potatoes are tender, about 30 minutes.
- Serve as a side dish.
