Crispy Roasted Sweet Potato Wedges with Lime and Cilantro


  • 4 sweet potatoes, peeled and cut into thin wedges
  • 2 tbs olive oil
  • 1/2 tsp lime zest
  • 2 tbs lime juice
  • 3 tbs cilantro leaves, chopped
  • kosher salt and black pepper to taste
These are delicious sweet potatoes that are crispy and flavored with lime, olive oil, salt, pepper, cilantro and lime.

  • Toss the sweet potato wedges with the olive oil and 1/2 tsp of lime zest.
  • Season with salt and pepper.
  • Roast on 2 rimmed baking sheets in a preheated 425 degree oven, tossing once, until golden brown. About 15 minutes.
  • Drizzle with the lime juice and cilantro.
