Curried Moroccan Couscous
Ingredients
2 and 1/2 cups vegetable broth | ||
1/2 cup golden raisins | ||
1/4 cup fresh lemon juice | ||
2 tbs candied ginger | ||
1 tsp curry powder | ||
1 cup couscous | ||
1/3 cup celery,finely diced | ||
1/4 cup scallions, thinly sliced | ||
2 tbs fresh cilantro,chopped | ||
1/3 cup pistachio nuts, roasted and coarsely chopped |
This is a delicious vegetarian dish flavored with raisins, lemon juice, candied ginger, curry powder and cilantro.
- Bring the broth to a boil, then toss all ingredients into the broth and stir well.
- Cover and immediately remove from heat.
- Let sit covered for 10 minutes, then stir.
- Serve warm or cold.
