Curried Moroccan Couscous
|2 and 1/2 cups vegetable broth|
|1/2 cup golden raisins|
|1/4 cup fresh lemon juice|
|2 tbs candied ginger|
|1 tsp curry powder|
|1 cup couscous|
|1/3 cup celery,finely diced|
|1/4 cup scallions, thinly sliced|
|2 tbs fresh cilantro,chopped|
|1/3 cup pistachio nuts, roasted and coarsely chopped|
This is a delicious vegetarian dish flavored with raisins, lemon juice, candied ginger, curry powder and cilantro.
- Bring the broth to a boil, then toss all ingredients into the broth and stir well.
- Cover and immediately remove from heat.
- Let sit covered for 10 minutes, then stir.
- Serve warm or cold.
