Italian Bell Pepper and Fennel Salad
|4 celery stalks sliced thinly on the diagonal|
|1 red bell pepper, cut into thin strips|
|1 yellow bell or orange bell pepper, cut into thin strips|
|1/2 fennel bulb, cut into thin strips|
|4 tbs fresh parsley, chopped|
|10 whole black olives, seeded|
|10 whole green olives, seeded|
|For the Dressing:|
|6-8 tbs extra virgin olive oil|
|2-3 tbs red wine vinegar|
|1 tsp crushed fennel seeds|
|2 tsp dried oregano|
|1-2 cloves garlic, crushed|
|pinch of superfine sugar|
|kosher salt and black pepper to taste|
This is a crispy Italian salad with celery, bell peppers, fennel and olives dressed with a spicy Italian vinaigrette.
- Place salad ingredients in a large bowl, then place the ingredients for the dressing in a screw top jar and shake well to combine.
- Taste the dressing and adjust the seasoning if desired,
- Pour the dressing over the salad, and toss well to combine.
- Cover the salad and chill for 30 minutes before serving.
