Italian Bell Pepper and Fennel Salad

  • 4 celery stalks sliced thinly on the diagonal
  • 1 red bell pepper, cut into thin strips
  • 1 yellow bell or orange bell pepper, cut into thin strips
  • 1/2 fennel bulb, cut into thin strips
  • 4 tbs fresh parsley, chopped
  • 10 whole black olives, seeded
  • 10 whole green olives, seeded
  • For the Dressing:
  • 6-8 tbs extra virgin olive oil
  • 2-3 tbs red wine vinegar
  • 1 tsp crushed fennel seeds
  • 2 tsp dried oregano
  • 1-2 cloves garlic, crushed
  • pinch of superfine sugar
  • kosher salt and black pepper to taste
This is a crispy Italian salad with celery, bell peppers, fennel and olives dressed with a spicy Italian vinaigrette.

  • Place salad ingredients in a large bowl, then place the ingredients for the dressing in a screw top jar and shake well to combine.
  • Taste the dressing and adjust the seasoning if desired,
  • Pour the dressing over the salad, and toss well to combine.
  • Cover the salad and chill for 30 minutes before serving.
