Brownies with Coconut and Chocolate Sauce


2 cups sugar
1 stick unsalted butter, melted
1/2 cup canola oil
9 tbs cocoa powder
4 eggs
1 and 1/2 tsp baking powder
1 cup ap flour
1 tsp pure vanilla extract
1 cup coconut
1 cup pecans, roughly chopped (optional)
For the Chocolate Sauce:
1 cup sugar
2 and 1/2 tbs cornstarch
3 tbs cocoa powder
1 cup water
1 tsp butter
1/8 tsp salt
1 tsp pure vanilla extract
Vanilla ice cream for serving
These delicious brownies are covered with a silky sweet chocolate sauce. They go great with vanilla ice cream.

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, combine the sugar, melted butter and oil.
  • Stir in the cocoa powder.
  • Add the eggs, one at a time, mixing well after each addition.
  • Add the flour and baking powder and mix.
  • Fold in the vanilla, coconut and pecans, if using.
  • Spoon the mixture into a 9×13 greased baking pan and bake at 350 for 30 minutes.
  • For the chocolate sauce, in a small sauce pan , combine the sugar, cornstarch and cocoa.
  • Add the water and stir to combine.
  • Using medium heat, stirring regularly until thick. About 8 minutes.
  • Add the butter, salt and vanilla and mix.
  • Top the brownies with a scoop of vanilla ice cream topped with chocolate sauce and chopped nuts.
