Chef Ben Fords Texas Barbecue Rub and Mop Sauce
Ingredients
For Texas Barbecue Rub: | ||
1/4 cup kosher salt | ||
3 tbs sugar | ||
3 tbs brown sugar | ||
1/4 cup chili powder | ||
1/4 cup New Mexico chili powder | ||
2 tbs freshly ground black pepper | ||
2 tbs ground chipolte powder | ||
2 tbs cumin | ||
1 tbs smoked paprika | ||
1 tbs onion powder | ||
1 tbs garlic powder | ||
1 tbs celery salt | ||
1 tbs Coleman's dry mustard | ||
1 tsp cayenne pepper | ||
For Ben's Mop Sauce: | ||
12 oz's beer (not dark) | ||
1/2 cup cider vinegar | ||
1/4 cup vegetable oil | ||
2 tbs Worcestershire sauce | ||
2 tbs Serrano peppers, chopped | ||
1 tbs black peppercorns | ||
2 garlic cloves, crushed | ||
4 thyme sprigs | ||
1 bay leaf | ||
1/4 cup of the barbecue rub |

- Combine all ingredients and use generously as a rub on beef, chicken or pork.
Ben’s Mop Sauce:
- Add all ingredients to a small sauce pan and simmer for 5-10 minutes.
- Use as a basting sauce for beef, chicken or pork.
