Charcoal Grilled White Fish Fillets with Cooked Salsa

Ingredients

4 large white fish fillets
2 tbs olive oil
kosher salt and black pepper to taste
For the Salsa:
1-2 jalapeno peppers, seeded and diced
2 cloves garlic, minced
2 shallots, diced
2 ripe tomatoes, peeled, seeded and chopped
1/4 cup fresh mint
1/4 cup lemon juice
3 tbs dry white wine
2 tsp olive oil
kosher salt and black pepper to taste
You can use and firm white fish fillet for this recipe. This is a unusual salsa that is cooked and contains, chilies, garlic, shallots, tomatoes, fresh mint, white wine and lemon juice.

  • Brush the fillets with olive and season with salt and pepper on both sides.
  • Cook over hot charcoal turning once. Fish is done when it flakes easily.
  • To make the salsa, saute the chili pepper for 1 minute in olive oil, then add the garlic and shallots and cook for another 1 minute.
  • Add the chopped tomatoes and simmer for a few minutes until most of the liquid has evaporated.
  • Add the mint and stir.
  • To serve pour the salsa over the fish fillets.
