Sour Cream Rhubarb Cake

Ingredients

  • 1 and 1/2 cups sugar
  • 1/2 cup melted butter
  • 1 egg
  • 1 cup sour cream
  • 1 tsp pure vanilla extract
  • 1 tsp baking soda
  • 2 cups flour
  • 1 and 1/2 cups chopped rhubarb
  • For the Topping:
  • 1/3 cup sugar
  • 1 tsp ground cinnamon
This is a wonderfully sweet and tart creamy cake.

  • Preheat oven to 350 degrees.
  • Grease a 9×13 pan and set aside.
  • In a mixing bowl, combine the sugar, butter, egg, sour cream and vanilla.
  • Mix well, then stir in the baking soda and flour.
  • Add the rhubarb and mix to combine.
  • Spread the batter in the pan.
  • In a small bowl, combine the sugar and cinnamon.
  • Sprinkle over the batter and bake at 350 degrees for 30-35 minutes.
