|2 (20 oz) cans of pineapple chunks, chopped|
|1 small sweet onion, diced|
|2 jalapeno peppers, seeded and diced|
|1/2 small bell pepper, chopped|
|1/2 small orange pepper, chopped|
|1 small bunch cilantro, finely chopped with stems|
|2 garlic cloves, finely chopped|
|1/3 cup fresh lime juice|
|kosher salt and black pepper to taste|
- Add all ingredients to a non metal bowl and mix well.
- Cover and refrigerate for several hours before serving.
- Serve over tacos, meats or as a dipping sauce.
