Salt Fish Salad

Ingredients

  • 1 lb salt cod fillets, rinsed for 24 hours
  • 1 tbs extra virgin olive oil
  • 12 oz of mixed salad greens
  • 2 medium ripe tomatoes, cut into wedges
  • 1/2 cup chopped walnuts
  • 1/4 cup extra virgin olive oil
  • 1 tbs sugar
  • 1 tbs fresh chives, chopped
  • kosher salt and black pepper to taste
  • 3 tbs red wine vinegar
  • 1 tbs water
  • 2 garlic cloves, minced
  • Soak cod in 4 changes of water for 24 hours to remove salt.
  • Heat 1 tbs olive oil in a large nonstick skillet over medium high heat and cook cod fillets for about 7 minutes or until fish flakes easily.
  • Remove fish from skillet, then flake into large pieces, set aside.
  • In a bowl combine the vinaigrette ingredients and mix well.
  • To serve, place about 2 cups salad greens on each of 4 individual plates, top with tomato wedges, cooked fish and walnuts,
  • Drizzle vinaigrette over salads.
