Chinese Stir Fried Shrimp

  • 1 lb large shrimp, shell on, legs removed
  • 1 tbs soy sauce
  • 1/2 tbs dry sherry
  • 2 tsp fresh ginger, grated
  • 2 tbs peanut oil
  • 3 cloves garlic, mnced
  • 3 scallions, thinly sliced on a bias, white and green parts
  • 1 tbs sesame oil
  • kosher salt and white pepper taste
  • red pepper flakes, optional
  • Marinate the shrimp in shell for 15 minutes in the soy sauce, sherry and ginger. Drain.
  • Heat a wok of frying pan using high heat. Add the peanut oil, add the shrimp, garlic and scallions and stir fry until the garlic begins to change color and the shrimp is pink.. Take care not to burn.
  • Add the scallions, salt, pepper and sesame oil, and toss for about 30 seconds.
  • Serve over rice.
