Chinese Sesame Fish Paste


  • 2 lbs white fish fillets
  • 2 tbs dry sherry
  • 2 tbs soy sauce
  • 2 scallions, chopped
  • 1 tbs sesame oil
  • 1 egg
  • kosher salt and black pepper to taste
This delicious mixture is typically used to stuff Chinese Dumplings. The dumplings are stuffed with the fish paste, then steamed and served with a variety of sauces.
  • Cut the fillets into chunks and add to a food processor, then process into a fine paste.
  • Remove the fish paste and add to a bowl along with the sherry, soy sauce, scallions and egg.
  • Combine well, refrigerate covered until ready to use.
  • Makes 2 lbs.
