- 2 lbs white fish fillets
- 2 tbs dry sherry
- 2 tbs soy sauce
- 2 scallions, chopped
- 1 tbs sesame oil
- 1 egg
- kosher salt and black pepper to taste
This delicious mixture is typically used to stuff Chinese Dumplings. The dumplings are stuffed with the fish paste, then steamed and served with a variety of sauces.
- Cut the fillets into chunks and add to a food processor, then process into a fine paste.
- Remove the fish paste and add to a bowl along with the sherry, soy sauce, scallions and egg.
- Combine well, refrigerate covered until ready to use.
