Cornmeal Waffles


  • 3 and 1/2 cups ap flour
  • 2 and 1/2 cups cornmeal
  • 2 tbs baking powder
  • 2 tsp sugar
  • 4 cups milk
  • 6 tbs vegetable oil
  • 4 large eggs
  • 1 tsp pure vanilla extract (optional)
You may serve these waffles topped with savory ingredients or if you are going to serve them with syrup, add 1 tsp of pure vanilla extract to the batter.

  • In a large bowl mix the dry ingredients, then add the milk, oil and eggs and mix well.
  • Pour the batter onto a hot waffle iron and cook according to the waffle irons instructions.
  • Set on a plate or in a warm oven and serve as desired.
  • Makes about 14 waffles.
