Anchovy Butter Sauce

  • 1 stick unsalted butter
  • 1 tbs anchovies, chopped
  • 1 tbs lemon juice
  • 1 tbs chopped parsley

This sauce is quite delicious served over fish, artichokes or asparagus.

  • Melt butter slowly in a small sauce pan until amber.
  • Stir in the anchovies and lemon juice.
  • Add the parsley when ready to serve.
