Cold Creamy Artichoke Soup
|2 (9 oz) packages frozen artichoke hearts|
|1 and 1/2 cans cream of mushroom soup|
|1 cup light cream|
|1/4 cup chicken broth|
|1/4 cup white wine|
|Kosher salt and white pepper to taste|
|8 thin lemon slices for garnish|
|Fresh parsley for garnish|
- Cook artichokes according to package directions.
- Combine all ingredients except for lemon slices in a food processor and puree.
- Correct the seasoning and chill well.
- Serve in chilled soup cups and garnish with lemon slices and parsley.
