Cold Creamy Artichoke Soup

Ingredients

2 (9 oz) packages frozen artichoke hearts
1 and 1/2 cans cream of mushroom soup
1 cup light cream
1/4 cup chicken broth
1/4 cup white wine
Kosher salt and white pepper to taste
8 thin lemon slices for garnish
Fresh parsley for garnish

 

  • Cook artichokes according to package directions.
  • Combine all ingredients except for lemon slices in a food processor and puree.
  • Correct the seasoning and chill well.
  • Serve in chilled soup cups and garnish with lemon slices and parsley.
