Crab Salad with Watermelon
Ingredients
1 lb jumbo lump or lump crabmeat | ||
2 scallions, thinly sliced | ||
Juice of 1-2 limes | ||
2 Thai or Serrano chilies, seeded, thinly sliced | ||
1 tsp sugar | ||
1/2 small cucumber, seeded and cut into small dice | ||
2 tbs fresh mint, chopped | ||
kosher salt and black pepper to taste | ||
a dash of white wine vinegar | ||
4 (1/4) lb slices of watermelon |
- Add the crab meat to a non-reactive bowl.
- Add all other ingredients except the watermelon to another bowl and mix well, then pour over the crab and gently mix, being careful not to break up the lumps.
- Evenly divide the salad over the watermelon slices, then season with salt and pepper, then garnish with mint leaves.
