Curry Mayonnaise
Ingredients
1 tbs vegetablel oil | ||
1 tbs hot curry powder | ||
2/3 cup chicken stock | ||
1 tbs tomato paste | ||
1 tbs sweet chutney | ||
2 tbs lemon juice | ||
3/4 cup mayonnaise | ||
2 tbs light cream | ||
1 small onion, chopped |
- Add oil to a saute pan and cook onion for about 5 minutes or until softened.
- Stir in curry powder.
- Add chicken stock, tomato paste, sweet chutney and lemon juice..
- Allow mixture to cool, then stir in mayonnaise and light cream.
- Store in a jar and refrigerate until ready to use.
