Curry Mayonnaise


  • 1 tbs vegetablel oil
  • 1 tbs hot curry powder
  • 2/3 cup chicken stock
  • 1 tbs tomato paste
  • 1 tbs sweet chutney
  • 2 tbs lemon juice
  • 3/4 cup mayonnaise
  • 2 tbs light cream
  • 1 small onion, chopped
  • Add oil to a saute pan and cook onion for about 5 minutes or until softened.
  • Stir in curry powder.
  • Add chicken stock, tomato paste, sweet chutney and lemon juice..
  • Allow mixture to cool, then stir in mayonnaise and light cream.
  • Store in a jar and refrigerate until ready to use.
