Homemade Mayonnaise

Ingredients
1 egg yolk | ||
1 tsp kosher salt | ||
1/2 tsp sugar | ||
1/4 tsp dry mustard | ||
dash cayenne pepper | ||
2 tbs lemon juice | ||
1 cup oil |
- In the bowl of a food processor, combine egg yolk, salt, sugar, pepper, mustard and lemon juice and blend well.
- Add oil by teaspoons full and process at medium speed until half the oil has been added.
- Add the remaining 1 tbs of lemon juice and blend well.
- Add the remaining oil by tablespoons and continue blending until all the oil has been added and the mayonnaise is thick and smooth.
- Cover and chill.
