Homemade Mayonnaise

  • 1 egg yolk
  • 1 tsp kosher salt
  • 1/2 tsp sugar
  • 1/4 tsp dry mustard
  • dash cayenne pepper
  • 2 tbs lemon juice
  • 1 cup oil
  • In the bowl of a food processor, combine egg yolk, salt, sugar, pepper, mustard and lemon juice and blend well.
  • Add oil by teaspoons full and process at medium speed until half the oil has been added.
  • Add the remaining 1 tbs of lemon juice and blend well.
  • Add the remaining oil by tablespoons and continue blending until all the oil has been added and the mayonnaise is thick and smooth.
  • Cover and chill.
