Lobster and Mushrooms in Cream


  • 2 lbs cooked lobster meat
  • 2 lbs fresh mushrooms
  • 3/4 lb plus 4 tbs butter
  • 3/4 cup flour
  • 1 1/2 quarts milk
  • 1 pint half and half
  • Kosher salt to taste
  • dash of cayenne
  • Dash of nutmeg
  • 1/2 cup sherry


  • Slice the cooked lobster meat and set aside.
  • Thinly slice the mushrooms and saute in 4 tbs of butter. Set aside.
  • Make a  cream sauce of the remaining ingredients, beating in the sherry at the end with the sauce has thickened.
  • Combine the lobster, mushrooms and serve in  a chafing dish.
