Lobster and Mushrooms in Cream
Ingredients
2 lbs cooked lobster meat | ||
2 lbs fresh mushrooms | ||
3/4 lb plus 4 tbs butter | ||
3/4 cup flour | ||
1 1/2 quarts milk | ||
1 pint half and half | ||
Kosher salt to taste | ||
dash of cayenne | ||
Dash of nutmeg | ||
1/2 cup sherry |
- Slice the cooked lobster meat and set aside.
- Thinly slice the mushrooms and saute in 4 tbs of butter. Set aside.
- Make a cream sauce of the remaining ingredients, beating in the sherry at the end with the sauce has thickened.
- Combine the lobster, mushrooms and serve in a chafing dish.
