Mixed Greens with Feta and Dijon Vinaigrette
|3 tbs red wine vinegar|
|2 cloves garlic, minced|
|1 tsp Dijon mustard|
|1 tsp sugar|
|kosher salt and black pepper to taste|
|1/4 cup extra virgin olive oil|
|1 (10 oz) package of mixed greens|
|4 oz Feta cheese, crumbled|
- Place the first 5 ingredients in a blender and blend until well blended.
- Add oil and blend for another 15 seconds.
- Place greens in a bowl, add dressing and toss to coat.
- Top with cheese.
