Smoked Trout Green Apple and Gouda Sandwich
|1 tbs mayonnaise|
|2 slices pumpernickel bread|
|2 ozs smoked trout, flaked|
|1 oz aged Gouda cheese, cut into thin slices|
|1/2 granny smith apple, cored and cut into thin slices|
|a few leaves of arugula|
|kosher salt and black pepper to taste|
- To assemble the sandwich, spread the mayonnaise on one side of both pieces of bread.
- Mound the trout on one of the bread slices, then top with the Gouda, apple and arugula.
- Season with salt and pepper, then top with the other slice of bread.
- Recipe may be multiplied as desired.
