Smoked Trout Green Apple and Gouda Sandwich

  • 1 tbs mayonnaise
  • 2 slices pumpernickel bread
  • 2 ozs smoked trout, flaked
  • 1 oz aged Gouda cheese, cut into thin slices
  • 1/2 granny smith apple, cored and cut into thin slices
  • a few leaves of arugula
  • kosher salt and black pepper to taste
  • To assemble the sandwich, spread the mayonnaise on one side of both pieces of bread.
  • Mound the trout on one of the bread slices, then top with the Gouda, apple and arugula.
  • Season with salt and pepper, then top with the other slice of bread.
  • Recipe may be multiplied as desired.
