Spicy Rice noodle Salad
|6 tbs rice vinegar|
|2 tsp peanut butter|
|4 tsp dijon mustard|
|4 tsp honey|
|4 tsp soy sauce|
|1/4 cup sesame oil|
|1/4 cup vegetable oil|
|1/4 cup orange juice|
|1 long red hot pepper, thinly sliced on a bias|
|6 scallions, sliced on a bias|
|3 tbs sesame seeds, tosted|
|1 lb rice noodles|
- To make the dressing add all ingredients except for the scallions, red pepper and the noodles to a bowl and mix well.
- Add the rice noodles to a pot of boiling water and cook for 1-2 minutes until soft.
- Remove noodles, drain and add to a large bowl.
- Mix well with the dressing and garnish with the scallions and red pepper.
