Spicy Rice noodle Salad

  • 6 tbs rice vinegar
  • 2 tsp peanut butter
  • 4 tsp dijon mustard
  • 4 tsp honey
  • 4 tsp soy sauce
  • 1/4 cup sesame oil
  • 1/4 cup vegetable oil
  • 1/4 cup orange juice
  • 1 long red hot pepper, thinly sliced on a bias
  • 6 scallions, sliced on a bias
  • 3 tbs sesame seeds, tosted
  • 1 lb rice noodles
  • To make the dressing add all ingredients except for the scallions, red pepper and the noodles to a bowl and mix well.
  • Add the rice noodles to a pot of boiling water and cook for 1-2 minutes until soft.
  • Remove noodles, drain and add to a large bowl.
  • Mix well with the dressing and garnish with the scallions and red pepper.
