Summer Tomato and Cheese Salad
|for the dressing|
|1 tbs extra virgin olive oil|
|2 tbs balsamic vinegar|
|kosher salt and black pepper to taste|
|1 tsp dried basil|
|1 tsp dried rosemary, cracked or chopped|
|1 tsp dried thyme|
|1 tsp marjoram|
|2 tsp reserved cheese brine|
|for the salad|
|1 qt cherry tomatoes, red and yellow mix if desired, halved|
|4 cups mixed salad greens, coarsely chopped|
|2 ribs celery, thinly sliced|
|2 scallions, sliced on a bias, white and green parts|
|1/4 cup feta cheese, crumbled|
|1/4 cup mozzarella cheese balls in brine, halved (reserve 2 tsp brine liquid for the dressing)|
- In a large bowl, combine the olive oil, vinegar, salt pepper and herbs.
- Add the tomatoes, celery, and onions, toss to combine.
- Add 2 tsp cheese brine and allow to rest for 5 minutes.
- Add the salad greens and the cheeses and toss gently to combine.
