Summer Tomato and Cheese Salad


for the dressing
1 tbs extra virgin olive oil
2 tbs balsamic vinegar
kosher salt and black pepper to taste
1 tsp dried basil
1 tsp dried rosemary, cracked or chopped
1 tsp dried thyme
1 tsp marjoram
2 tsp reserved cheese brine
for the salad
1 qt cherry tomatoes, red and yellow mix if desired, halved
4 cups mixed salad greens, coarsely chopped
2 ribs celery, thinly sliced
2 scallions, sliced on a bias, white and green parts
1/4 cup feta cheese, crumbled
1/4 cup mozzarella cheese balls in brine, halved (reserve 2 tsp brine liquid for the dressing)
  • In a large bowl, combine the olive oil, vinegar, salt pepper and herbs.
  • Add the tomatoes, celery, and onions, toss to combine.
  • Add 2 tsp cheese brine and allow to rest for 5 minutes.
  • Add the salad greens and the cheeses and toss gently to combine.
