Summer Tomato Salad

Ingredients
2 lbs ripe tomatoes, cut into 1/2 inch slices | ||
3 tbs extra virgin olive oil | ||
2 tbs malt vinegar | ||
3/4 tsp packed light brown sugar | ||
1 tsp kosher salt | ||
1/2 tsp black pepper | ||
2 scallions (white and green parts), thinly sliced on the diagonal |
- Whisk together oil, vinegar, brown sugar, salt and pepper in a small bowl until all ingredients are completely combined.
- Arrange 1/3 of the tomatoes in one layer on a large platter.
- Drizzle 1/3 of the dressing and 1/3 of the scallions.
- Make 2 more layers of the tomatoes and scallions, drizzling each with the dressing.
