Summer Tomato Salad

  • 2 lbs ripe tomatoes, cut into 1/2 inch slices
  • 3 tbs extra virgin olive oil
  • 2 tbs malt vinegar
  • 3/4 tsp packed light brown sugar
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 scallions (white and green parts), thinly sliced on the diagonal


  • Whisk together oil, vinegar, brown sugar, salt and pepper in a small bowl until all ingredients are completely combined.
  • Arrange 1/3 of the tomatoes in one layer on a large platter.
  • Drizzle 1/3 of the dressing and 1/3 of the scallions.
  • Make 2 more layers of the tomatoes and scallions, drizzling each with the dressing.
