Tomatillo Salsa
Ingredients
8 tomatillos, husks removed | ||
1 jalapeno pepper with seeds | ||
1 small bunch cilantro. chopped | ||
1 small red onion, quartered | ||
8 cloves garlic | ||
Juice of 2 limes | ||
Kosher salt and black pepper to taste | ||
1 tbs extra virgin olive oil |
- Cut the tomatillos into quarters and add to a food processor, along with the onion, garlic, Jalapeno, cilantro, salt, pepper and lime juice.
- Add the olive oil and process until smooth.
- Taste and adjust seasoning.
