|8 tomatillos, husks removed|
|1 jalapeno pepper with seeds|
|1 small bunch cilantro. chopped|
|1 small red onion, quartered|
|8 cloves garlic|
|Juice of 2 limes|
|Kosher salt and black pepper to taste|
|1 tbs extra virgin olive oil|
- Cut the tomatillos into quarters and add to a food processor, along with the onion, garlic, Jalapeno, cilantro, salt, pepper and lime juice.
- Add the olive oil and process until smooth.
- Taste and adjust seasoning.
