Tomatillo Salsa


  • 8 tomatillos, husks removed
  • 1 jalapeno pepper with seeds
  • 1 small bunch cilantro. chopped
  • 1 small red onion, quartered
  • 8 cloves garlic
  • Juice of 2 limes
  • Kosher salt and black pepper to taste
  • 1 tbs extra virgin olive oil
  • Cut the tomatillos into quarters and add to a food processor, along with the onion, garlic, Jalapeno, cilantro, salt, pepper and lime juice.
  • Add the olive oil and process until smooth.
  • Taste and adjust seasoning.
