Roasted Sugared Almonds


  • 2 tbs canola oil, divided
  • 1 lb whole blanched almonds, divided
  • 2 tsp ground, cinnamon, divided
  • confectioners sugar for sprinkling
  • Heat 1 tbs oil in a large skillet over medium  heat.
  • Add 1/2 lb of almonds and cook while stirring until evenly browned.
  • Sprinkle with 1 tsp cinnamon, stir well.
  • Place on paper towels to drain.
  • Dust with confectioners sugar to taste.
  • Repeat with remaining ingredients.
