Creamy Gazpacho

Ingredients
4 cups of tomato juice | ||
3 cups of diced fresh ripe tomatoes,seeded and diced | ||
1 and 1/2 cups evaporated milk | ||
1/4 cup olive oil | ||
2 cloves garlic, minced | ||
dash of kosher salt and fresh cracked black pepper | ||
1/2 tsp hot pepper sauce | ||
3 cups peeled, seeded and chopped cucumbers | ||
1 cup chopped green peppers | ||
1 cup chopped onion | ||
garnishes; thyme sprigs, chopped cucumber, bell pepper and or onions |
This is a super creamy version of classic gazpacho.
- Combine tomato juice, tomatoes, evaporated milk, lemon juice, oil, garlic, salt, pepper and hot pepper sauce.
- Add to a blender in batches and puree until smooth.
- Pour into a serving bool and add cucumbers, bell peppers and onion.
- Chill for at least 2 hours and serve with desired garnishes.
