Creamy Gazpacho

Ingredients

4 cups of tomato juice
3 cups of diced fresh ripe tomatoes,seeded and diced
1 and 1/2 cups evaporated milk
1/4 cup olive oil
2 cloves garlic, minced
dash of kosher salt and fresh cracked black pepper
1/2 tsp hot pepper sauce
3 cups peeled, seeded and chopped cucumbers
1 cup chopped green peppers
1 cup chopped onion
garnishes; thyme sprigs, chopped cucumber, bell pepper and or onions

This is a super creamy version of classic gazpacho.

  • Combine tomato juice, tomatoes, evaporated milk, lemon juice, oil, garlic, salt, pepper and hot pepper sauce.
  • Add to a blender in batches and puree until smooth.
  • Pour into a serving bool and add cucumbers, bell peppers and onion.
  • Chill for at least 2 hours and serve with desired garnishes.
