|4 cups of tomato juice|
|3 cups of diced fresh ripe tomatoes,seeded and diced|
|1 and 1/2 cups evaporated milk|
|1/4 cup olive oil|
|2 cloves garlic, minced|
|dash of kosher salt and fresh cracked black pepper|
|1/2 tsp hot pepper sauce|
|3 cups peeled, seeded and chopped cucumbers|
|1 cup chopped green peppers|
|1 cup chopped onion|
|garnishes; thyme sprigs, chopped cucumber, bell pepper and or onions|
This is a super creamy version of classic gazpacho.
- Combine tomato juice, tomatoes, evaporated milk, lemon juice, oil, garlic, salt, pepper and hot pepper sauce.
- Add to a blender in batches and puree until smooth.
- Pour into a serving bool and add cucumbers, bell peppers and onion.
- Chill for at least 2 hours and serve with desired garnishes.
