- 4 cups raw cauliflower florets
- 1 cup stuffed green olives, chopped
- 2/3 cup green pepper, chopped
- 1/2 cup onion, chopped
- 1/2 cup roasted red peppers, chopped
- 1/2 cup canola oil
- 3 tbs lemon juice
- 3 tbs wine vinegar
- kosher salt and fresh cracked black pepper to taste
- 1/2 tsp sugar
- Combine cauliflower, olives, green peppers, onion, and roasted red peppers.
- Add remaining ingredients to a bowl and whisk.
- Pour over vegetables.
- Chill for several hours then serve.
