Spicy Indian Kebabs

Ingredients

  • 1 lb lean ground lamb
  • 1 cup chickpea or  potato flour
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • 2 tsp ground cumin
  • 1 tsp ground coriander seed
  • 1 tsp fresh ginger, grated
  • 1/4 tsp ground cloves
  • juice of 1 lime
  • 1/4 cup plain yogurt
  • 2 tsp melted butter
  • In a bowl combine all ingredients and knead thoroughly with hands to combine.
  • Chill covered for several hours.
  • Using water soaked skewers, form cylindrical kebabs and cook over hot charcoal, turning frequently to cook evenly. About 8-10 minutes.
  • Serve with tomatoes and cucumbers.
