Turkish Salad
Ingredients
1 cup haricot beans, soaked and drained | ||
2 and 1/2 cups water | ||
2 ts oregano | ||
3 tomatoes, sliced | ||
5 scallions, chopped | ||
1 tbs fresh parsley, chopped | ||
1 tbs fresh mint, chopped | ||
Dressing: | ||
4 tbs olive oil | ||
2 tbs lemon juice | ||
kosher salt and black pepper |
Directions:
- Blend olive oil and lemon juice together and season with salt, pepper and oregano.
- Mix the cooked beans with the parsley, mint, tomatoes and scallions.
- Marinate in the dressing.
- Serve with a bowl of couscous or a salad of cauliflower and mushrooms.
