West African Peanut Sauce
Ingredients
5 cups water | ||
4 ripe medium tomatoes, chopped | ||
1 tbs vegetable oil | ||
1 onion, chopped | ||

1/4 cup peanut butter | ||
2 tbs tomato paste | ||
2 beef bouillon cubes | ||
1 large fresh okra, chopped |
- Put water, tomatoes, oil in a large sauce pan.
- Cover and boil for 10 minutes.
- Add onion, salt, peanut butter, tomato paste, and bouillon cubes.
- Add okra and reduce heat. Simmer for 20 minutes.
- Goes well with beef or chicken, served over rice.
