Caper Stuffed Hard Boiled Eggs
Ingredients
3 eggs, hard boiled and peeled | ||
3 tbs mayonnaise | ||
1 tsp Dijon mustard | ||
1 tsp chopped capers | ||
Whole capers, for garnish |
- Cut eggs in half lengthwise
- Remove yolks and mash with fork in a small bowl.
- Add mustard, mayonnaise and chopped capers.
- Blend together well.
- Spoon mixture into egg halves and top each half with a whole caper.
- Chill covered for several hours before serving.
