Pepperoni Salad
Ingredients
1 stick of pepperoni, thinly sliced | ||
1 medium onion, sliced into rings | ||
1/4 lb of blue cheese, crumbled | ||
2/3 cup extra virgin olive oil | ||
1/3 cup wine vinegar | ||
1 lb of spinach, stems removed and chopped | ||
kosher salt and black pepper to taste |
- Mix oil and vinegar, add the pepperoni and crumbled blue cheese, season with salt and pepper
- Marinate for at least 8 hours or overnight.
- To serve, toss with spinach.
