English Buttermilk Cookies with Cream Cheese Frosting
Ingredients
1/2 cup of unsalted butter, softened | ||
1 cup sugar | ||
1 egg | ||
1 tsp vanilla extract | ||
2 and 1/2 cups flour | ||
1/2 tsp ground nutmeg | ||
1/2 tsp baking soda | ||
1/2 tsp salt | ||
1/2 cup buttermilk | ||
For the Frosting: | ||
4 tbs softened butter (1/2 stick) | ||
4 tbs cream cheese, softened | ||
1 and 1/2 cups powdered sugar | ||
1 tsp vanilla extract | ||
1/2 cup buttermilk |
These are wonderful soft little cookies that are great served with coffee or tea.
- Preheat oven to 375 degrees.
- Cream together the butter and sugar.
- Add the egg and vanilla and beat well.
- Combine the dry ingredients.
- Gradually add to the creamed mixture, alternating with the butter milk, until well mixed.
- Drop by the rounded tablespoon onto a greased cookie sheet with about 2 inches between cookies.
- Bake at 375 degrees for 10 to 12 minutes or until the edges are lightly browned.
- Let cool before frosting.
- For the frosting, beat together the butter, cream cheese, powdered sugar and vanilla until the mixture is a nice spreading consistency.
