Pasta Shells with Mushrooms and Roasted Red Peppers, Pecorino and Olives


  • 1 lb pasta shells
  • 4 tbs extra virgin oil
  • 1/2 lb mushrooms, minced
  • 1/2 lb roasted red peppers, drained and finely chopped
  • 1/2 lb pecorino cheese, cubed
  • 1/2 cup green olives,pitted and halved
  • 1/2 cup green olives,pitted and halved
  • 2 tbs of capers,drained
  • 1 tsp oregano
  • kosher salt and fresh cracked black pepper to taste

This is a delicious pasta salad sure to become one of your favorites. It contains elbow pasta, mushrooms, roasted red peppers, pecorino cheese, green olives and capers.


  • Bring a large pot of salted water to a boil.
  • Add the pasta and cook according to package directions.
  • Drain the pasta and add to a large bowl.
  • Add the olive oil,, mushrooms, peppers, pecorino, olives and capers.
  • Season with oregano, salt and pepper and toss well to combine.
