Pasta Shells with Mushrooms and Roasted Red Peppers, Pecorino and Olives
Ingredients
1 lb pasta shells | ||
4 tbs extra virgin oil | ||
1/2 lb mushrooms, minced | ||
1/2 lb roasted red peppers, drained and finely chopped | ||
1/2 lb pecorino cheese, cubed | ||
1/2 cup green olives,pitted and halved | ||
1/2 cup green olives,pitted and halved | ||
2 tbs of capers,drained | ||
1 tsp oregano | ||
kosher salt and fresh cracked black pepper to taste |
This is a delicious pasta salad sure to become one of your favorites. It contains elbow pasta, mushrooms, roasted red peppers, pecorino cheese, green olives and capers.
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to package directions.
- Drain the pasta and add to a large bowl.
- Add the olive oil,, mushrooms, peppers, pecorino, olives and capers.
- Season with oregano, salt and pepper and toss well to combine.
