Chilean Lomito Sandwich
Ingredients
1 (3 lb) pork roast, trimmed of fat | ||
2 large carrots, cut into chunks | ||
2 ribs of celery, chopped | ||
2 onions, quartered | ||
2 bay leaves | ||
4 cloves garlic smashed | ||
3 tbs oregano | ||
kosher salt and fresh cracked black pepper to taste | ||
4 cups chicken stock, canned or homemade Food So Good Chicken | ||

water as needed | ||
3 ripe avocados | ||
3 large tomatoes, sliced | ||
1 cup mayonnaise | ||
cheese of choice (optional) | ||
6 large semi soft rolls |
This sandwich is pretty much considered the National dish of Chile. It is a pork sandwich with thinly sliced pork that has been braised for hours in a flavorful broth and browned off on the grill. It goes a top of a large slightly sweet soft roll, topped with tomatoes, smashed avocado an copious amounts of mayonnaise. If you are ever in Chile the place to go for the best Lomito is Fuente Alemena which is off Santiago’s Central Plaza Italia. This is an abbreviated version that you can prepare at home. It’s not the real thing but we are sure that you will enjoy it. We use pork roast in this recipe because it is very tender and doesn’t need to be cooked as long as other cuts of pork.
- Bring pork roast to room temperature.
- Trim roast of excess fat.
- Season outside of roast with salt, pepper and oregano.
- In a large dutch oven brown roast all over.
- Place roast in a large roasting pan, along with the carrots, onion, garlic and celery.
- Add the chicken stock
- Place in a preheated 400 degree oven and braise the roast for 2 hours or until the internal temperature is 160 degrees.
- Add water to braising liquid if necessary. The braising liquid should be half way up the side of the roasting pan at all times.
- When pork is done Remove from braising liquid, and set aside.
- Using a wire mesh strainer, strain the braising liquid into a large stock pot.
- Over medium heat reduce strained liquid slightly. You should have about 4 cups.
- After pork roast has rested slice it very thinly.
- Add about 1/2 lb of the sliced pork to each of 6 rolls.
- Smash the avocado and spread onto pork.
- Add tomatoes and dress with a liberal amount of mayonnaise.
