Herb Garden Potato Salad

  • 3 lbs potatoes
  • 1 cup chopped celery
  • 1/2 cup sliced scallions
  • 2 tbs fresh parsley, chopped
  • 1 cup cottage cheese
  • 3/4 cup milk
  • 3 tbs lemon juice
  • 2 tbs cider vinegar
  • 1/2 tsp celery seed
  • 1/2 tsp dill weed
  • 1/2 tsp dry mustard
  • 1/2 tsp white pepper
  • kosher salt to taste

  • Scrub potatoes and boil in skins until fork tender.
  • Cool, peel and cut into 1 inch cubes.
  • Add to a large bowl along with celery, scallions and parsley.
  • Meanwhile in a blender, blend cottage cheese, milk, lemon juice, vinegar, celery seed, dill weed, dry mustard and white pepper until smooth.
  • Chill for 1 hour.
  • Pour chilled dressing over potatoes and vegetables, season with salt
