Shrimp and Cilantro Toasts
|1 lb large shrimp, peeled and deveined|
|8 scallions, chopped|
|1 stem lemon grass, chopped, white part only|
|1 clove garlic, crushed|
|1 egg white|
|1 tbs oil|
|1 tbs fresh cilantro, chopped|
|1 tbs fish sauce|
|2 tsp chili sauce|
|1 tsp lemon juice|
|8 slices stale white bread, crusts removed|
|oil for shallow frying|
- Add the shrimp, scallions, lemon grass, garlic, egg white, oil, cilantro, fish sauce, chili sauce and lemon juice to a food processor and process until smooth.
- Spread the mixture over the bread, right to the edge, then cut each slice into 4 triangles.
- Heat 3/4 inch of oil in a large saute pan, then add the bread and cook, shrimp side down, for 2-3 minutes.
- Turn over and cook the other side for 1 minute, or until crisp.
- Drain on paper towels.
