  • 2 ripe avocados
  • 1 and 2/3 cups of chicken broth, canned or homemade
  • 3 tbs lemon juice
  • 1 tsp salt
  • dash of cayenne
  • dash of garlic powder
  • 1 cup light cream
  • Garnish Options:
  • Crisp bacon bits
  • Canned green chilies, chopped
  • pimentos, chopped
  • tomatoes, chopped
  • Diced ham
  • hard cooked egg, chopped
  • Anchovies, chopped
This is a refreshing cold bisque that is perfect served with lunch on a hot summer day.

  • Puree avocados with broth, lemon juice and seasonings.
  • Blend in cream, cover and chill.
  • Serve with you choice of garnishes.
