Spanish Avocado Cold Bisque
Ingredients
2 ripe avocados | ||
1 and 2/3 cups of chicken broth, canned or homemade | ||
3 tbs lemon juice | ||
1 tsp salt | ||
dash of cayenne | ||
dash of garlic powder | ||
1 cup light cream | ||
Garnish Options: | ||
Crisp bacon bits | ||
Canned green chilies, chopped | ||
pimentos, chopped | ||
tomatoes, chopped | ||
Diced ham | ||
hard cooked egg, chopped | ||
Anchovies, chopped |
This is a refreshing cold bisque that is perfect served with lunch on a hot summer day.
- Puree avocados with broth, lemon juice and seasonings.
- Blend in cream, cover and chill.
- Serve with you choice of garnishes.
