Spanish Avocado Cold Bisque

Ingredients

2 ripe avocados
1 and 2/3 cups of chicken broth, canned or homemade
3 tbs lemon juice
1 tsp salt
dash of cayenne
dash of garlic powder
1 cup light cream
Garnish Options:
Crisp bacon bits
Canned green chilies, chopped
pimentos, chopped
tomatoes, chopped
Diced ham
hard cooked egg, chopped
Anchovies, chopped
This is a refreshing cold bisque that is perfect served with lunch on a hot summer day.

  • Puree avocados with broth, lemon juice and seasonings.
  • Blend in cream, cover and chill.
  • Serve with you choice of garnishes.
