Mango Mint Salsa

Ingredients

  • 1 cup diced fresh mango
  • 1/4 cup red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/4 cup scallions, chopped
  • 2 tbs mint, chopped
  • 1 clove garlic, chopped
  • 2 tbs fresh squeezed lime juice
  • 1 tbs extra virgin olive oil
  • kosher salt and fresh cracked black pepper to taste.
  • Add all ingredients to a non reactive bowl and combine well.
  • Allow flavors to marry for at least 1 hour before serving.
