Rum Barbecue Sauce

Ingredients

  • 1/4 cup dark rum
  • 3 cups onions, chopped
  • 1/2 cup canola oil
  • 1 tbs garlic, chopped
  • 1 (16oz) can Italian tomatoes, drained and chopped
  • 1 and 1/2 cups tomato puree
  • 2 tbs red pepper flakes
  • 2 tbs chili powder
  • 1 tsp ground cumin
  • 2 tbs dry mustard
  • 2 tbs sugar
  • 3 tbs white vinegar
  • 1 tsp salt
  • 1/2 tsp hot Hungarian paprika
  • 1 tbs maple syrup
  • cayenne pepper to taste
  • Saute onions in oil until soft.
  • Add garlic and cook for 2 minutes.
  • Add tomatoes, tomato puree,  pepper flakes, chili powder, cumin, dry mustard, sugar, vinegar, salt, paprika, maple syrup and rum.
  • Cook over  low heat for about an hour.
  • Add cayenne pepper to taste.
  • Cool and puree in a blender until smooth.
