Apricot Curried Lamb

Ingredients

  • 3 lbs of lean lamb, cut into cubes
  • 2 large onions, chopped
  • 2 cloves garlic, crushed
  • 2 tbs canola oil
  • 2 cups dried apricots, chopped
  • 1 and 1/2 cups water
  • 1 tsp cayenne pepper
  • 1 tbs curry powder
  • 1/2 cup brown sugar
  • 1/4 apple cider vinegar
  • dash of kosher salt and black pepper
  • In a 3 qt sauce pan add oil. Using medium heat, brown onion and garlic.
  • Add apricots and 1 cup of water.
  • Stir in cayenne,curry powder, brown sugar, vinegar, salt and pepper.
  • Simmer mixture gently and cook for 15 minutes.
  • Add another 1/2 cup of water.
  • Allow to cook for about 5 minutes.
  • Allow marinade to cool to room temperature.
  • Add lamb to a zip lock bag and pour marinade over.
  • Seal and let stand overnight.
  • Skewer lamb and grill over medium high heat until no longer pink.
  • Heat sauce in a small sauce pan and brush of cubed meat.
