Hawaiian Salmon Poke
- 1 lb of wild salmon, cubed
- 4 scallions, chopped, white and green parts
- 2 tsp of chili flakes
- 1 tbs bonito flakes
- 1 tbs sweet soy sauce
- kosher salt and fresh crack black pepper to taste
- 1 sheet of kombu (seaweed), shredded
- Add all ingredients to a glass bowl and gently mix well.
- Cover and refrigerate for several hours,
- Serve in small bowls.
