Coconut Sweet Potato Casserole
Ingredients
2 eggs | ||
1/2 cup butter | ||
1/4 cup milk | ||
3/4 lb of sweet potatoes, cooked | ||
1 cup sugar | ||
1 tsp vanilla extract | ||
1/4 cup butter softened | ||
1 cup shredded coconut | ||
1 cup sugar | ||
1/2 cup self rising flour |
- Combine the eggs, 1/2 cup butter, milk, sweet potatoes, 1 cup sugar and vanilla in a mixer bowl and mix well.
- Pour into a buttered 2 quart baking dish.
- Mix 1/2 cup butter, coconut, 1 cup sugar and flour in a bowl until crumbly.
- Sprinkle over the sweet potato mixture.
- Bake in a pre-heated 350 degree oven for 1 hour or until bubbly and heated through.
