Coconut Sweet Potato Casserole

Ingredients

  • 2 eggs
  • 1/2 cup butter
  • 1/4 cup milk
  • 3/4 lb of sweet potatoes, cooked
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1/4 cup butter softened
  • 1 cup shredded coconut
  • 1 cup sugar
  • 1/2 cup self rising flour
  • Combine the eggs, 1/2 cup butter, milk, sweet potatoes, 1 cup sugar and vanilla in a mixer bowl and mix well.
  • Pour into a buttered 2 quart baking dish.
  • Mix 1/2 cup butter, coconut, 1 cup sugar and flour in a bowl until crumbly.
  • Sprinkle over the sweet potato mixture.
  • Bake in a pre-heated 350 degree oven for 1 hour or until bubbly and heated through.
