Chinese Sesame Spinach Salad

Ingredients

  • 2 tbs sesame seeds, toasted in a dry pan for several minutes
  • 2 tbs sesame seeds, toasted in a dry pan for several minutes
  • 2 tsp sesame oil
  • 1/4 cup fresh lemon juice
  • 2 tbs soy sauce
  • kosher salt and black pepper to taste
  • dash of Tabasco sauce
  • 1/2 lb fresh mushrooms, sliced
  • 1 can sliced water chestnuts, drained
  • 1 bunch fresh spinach, tough stems removed
This is a delicious salad with fresh spinach, mushrooms and water chestnuts with a delightful sesame dressing.

  • Combine all ingredients, except for the spinach, mushrooms and water chestnuts in a jar with a tight fitting lid and shake to combine well.
  • Refrigerate for several hours.
  • Add the spinach, mushrooms and water chestnuts to a large bowl, pour some of the dressing over and gently toss well.
  • Do not add too much dressing.
  • Extra dressing may be be stored for several weeks.
