Chinese Sesame Spinach Salad
Ingredients
2 tbs sesame seeds, toasted in a dry pan for several minutes | ||

2 tsp sesame oil | ||
1/4 cup fresh lemon juice | ||
2 tbs soy sauce | ||
kosher salt and black pepper to taste | ||
dash of Tabasco sauce | ||
1/2 lb fresh mushrooms, sliced | ||
1 can sliced water chestnuts, drained | ||
1 bunch fresh spinach, tough stems removed |
This is a delicious salad with fresh spinach, mushrooms and water chestnuts with a delightful sesame dressing.
- Combine all ingredients, except for the spinach, mushrooms and water chestnuts in a jar with a tight fitting lid and shake to combine well.
- Refrigerate for several hours.
- Add the spinach, mushrooms and water chestnuts to a large bowl, pour some of the dressing over and gently toss well.
- Do not add too much dressing.
- Extra dressing may be be stored for several weeks.
